Many people know that coffee is an ingredient that needs to be stored properly and used fresh.
Not only does coffee that is not fresh taste bland, but if it is not stored properly, it can even produce ochratoxin, which can be harmful to your health. From the first wave of instant coffee, to the second wave of espresso, and now the third wave of boutique coffee, people are becoming more and more conscious of the quality of coffee, and one of the key elements of quality is 'freshness'.
But what does freshness mean?
Fresh coffee has three elements: freshly roasted beans, freshly roasted and freshly ground.
Coffee beans are fruity seeds with layers of pulp on the outside, although the pulp is also edible but not in the way we normally use it. The coffee seeds are usually processed, roasted and ground to produce the coffee we drink, and these three levels represent different levels of 'freshness': 1.
1. Fresh raw beans
Coffee is an agricultural crop and the beans are processed from the seeds of the fruit, so the freshness of the beans has a profound effect on the flavour of the coffee.
Once the coffee has been harvested and processed, the best tasting period for raw beans lasts for about a year if they are well preserved. The longer the beans are stored, the less moisture they will have, making them tasteless, and the flavour of the beans will be affected by the humidity and smell of the outside world.
Freshly roasted beans that are well preserved make for a good cup of coffee.
2. Freshly roasted
Depending on the degree of roasting, coffee should be served at least three days after roasting (freshly roasted coffee is not suitable for direct consumption as the beans emit a large amount of carbon dioxide, resulting in a lack of flavour) and should not be stored for more than one month.
When buying coffee, look for the "roast date" rather than the "shelf life". If the packaging does not indicate the date, it is possible that the coffee beans have been stored for some time.
3. Freshly ground
This is why it is important to grind the beans before brewing the coffee, as these aromas create an attractive flavour.
